I went to Myron Mixon's class in 2017. The first thing he did Saturday morning was prep a whole hog - a BIG hog.
Whole hog looks like a lot of work and patience.
The class had Myron's hog for breakfast on Sunday. It was killer.

BTW, got a story fer ya’ll. Did a big cook for a client last week, and the last minute throw together was the cole slaw. And while I got rave reviews on 17 hours wagyu brisket, chunked butt, pork belly, ribs, Hawaiian chicken, and bourbon cherry cobbler (that I spent 2 hours on and darn near cried because it was sooo perfect), you know what recipe everybody is asking for?

So here is the sophisticated, complex Cordon Bleu equivalent recipe, since obviously I am a really good barbecue cook but a LEGENDARY Cole slaw slinger (sheesh, I may quit cookin):
1 head shredded purple cabbage
1 head shredded green cabbage
2 or 3 bottles of good blue cheese dressing
Mix it all up in a pan while drinking beer into a blue stagger, chill hard, and sprinkle some paprika over the top. Feed to the ungrateful masses.
MORAL: The Big Man does seem to bless the simple things. A man might eat caviar all his life, but on his deathbed with family all around, bet on the fact he’s gonna ask fer a last biscuit with butter.

Myron was great! He was a patient teacher answering all questions. In person, he was nothing like his grouchy TV persona.

His class was at his house in Unadilla, GA. He has a pavillion set up for the class with overhead cameras on his prep table and large mirror so you can see. He had a crew working the cookers. It was a straight up pro operation. He demonstrated the prep, and the students broke out on tables to prep their own in groups. Myron's crew cooked them. There were 24 people in my class, and we prepped and cooked over 800 pounds of meat. We ate BBQ until it flowed out of our ears and I took a 15 pound pack back home. I was in smoke heaven that weekend. It was FUN!
