Sunday practice run.
Debbie and I played with some new flavors and techniques on ribs and brisket this past Sunday. We may have some keepers. We will see what the judges think.

Question: when you’re at a competition do you slice the flat and point separately? I do at home

Typically We only cook flats with very little point attached at competitions. Pretrimmed to 9.5" wide and about 18" long. I liked the way this little prime cooked up and would turn in both point and flat as pictured. It gives the taste judges options.
My typical boxes look like this.
We were turning in 9 slices at this time.

It is fun to taste judge if you have never experienced it. I am the official judge that runs the event I instruct taste judges on what I need from them. I rarely taste the turn in products while working the room.
