Ok, so here's the issue. We brought a rookie onto the team. Really like the guy and he cooks good cue. But, he's only been doing it for the last year or so. And he's done well in obscure events. Our biggest event, by far, is the Fort Bend County Fair BBQ cook off. With team reorganization, I took over brisket and shirked chicken off to him (because I am sooooo tired of cooking chicken). My best was 4th in consecutive years (not bad out of 65 teams). His first year, he pulls a 6th.

So, another one of my comp team members (also one of my best friends) and I are looking to compete more in both CBA and IBCA. Problem is, our rookie has also made the same decision and competes with his wife. No issue with that, what so ever. The competition is purely friendly.

So, head to head, as our teams head cook, I can't let him beat me. He knows I love the Sucklebusters poultry brine (for good reason, the stuff is phenomenal).

We are, at present, set to go head to head in January in El Campo, TX. So I gotta do something unexpected. So I am running a practice chicken tomorrow. Instead of my go to SB brine, I am experimenting with a turkey brine from Spiceogy. I plan to inject the bird tomorrow as well and do half with one seasoning and glaze mix and the other half with a different seasoning and glaze mix.

The rook isn't on the forum, so I will share my results. I mean, I can't let the kid beat me, right?

Note, totally friendly rivalry and the team "Texicue" will display any trophies won, regardless of which team member won them. It's more of a pride thing. :D

Just friendly huh? You want to beat this guy, LOL. Chicken soaking last night at 10 for a Sunday cook? I seem to remember reading that 4 hours was long enough in the brine for birds. Longer time made mushy . I have no Factual proof or experience just relating what’s left of my memory

Entirely friendly. But I do want to beat him like a rented mule! I have no doubt he feels the same way. That's what makes it so fun. :D

I accidentally experimented with overnight brines during a competition some years ago. Planned to cook a chicken for the masses and forgot about it, so we cooked it the next day. It was awesome! It probably helps that I end up diluting the brine so I can use my brine buckets. I've had brine bags leak, and these don't!

What better incentive could you possibly have than competing against a good friend ? Then you combine all of that experience as "Texicue" at the next Team Competition. :tup: :wav: :chef: :cheers: :salut: :texas:

Out of the brine. Cleaned, cut and injected with LC BBQ Fowl Play, and back into the fridge to rest. Shooting for a late lunch/early dinner. Wife is down with the flu, so trying to keep everything running.

I look at it like this. I always tell my fellow competitors I am here to have fun and visit with friends and family but at the end of the day I am here to take your money. :D Good luck Matt! The sanctioned world is a whole new level.

Yes, just male sure it says Rock & Rye and has the fruit.
Works great in my experience. Adding hot tea and honey/Cinnamon in it helps too

Initial observations. The Clucker Dust color is more consistent. The Yardbird is more mahogany, and slightly less consistent than the Clucker Dust.

Well, the results are in. The unanimous winner was the bird seasoned with Clucker Dust and glazed with a mixture of SB honey glaze and rib candy peach habanero, then lightly dusted with cayenne.

Both birds were incredibly moist and not mealy. The Clucker Dust adhered to the skin mich better than the Yardbird which helped with appearance.

Now, we tweak from here.
