Baby steps on the cheese. Blocks of medium cheddar and Monterey Pepper Jack cheeses then a 4 pound tri tip later today. Hope all is well.

Strangely enough I was looking up proper storing of cheese, length of time they said to smoke it for and when to vacuum seal it. Learned more than I thought I would. Smoked for 6 hours cold smoked and vacuumed sealed it after for two weeks then vacuum seal them individually after that. Cheese is in the books:

Tri tip is around 100* but it looks good then again, I haven't eaten in 8 hours so...

It's 54* here on this fall day. Cool enough. It's dial in day. Taking the time to figure out some stuff, happy with the results and thanks I appreciate that.

looks great!!
when you vac seal the cheese, I have found that a leaf of fresh basil in the package gives a great flavor addition, in other packages add the flavors you like such as fresh ground pepper, or thyme or ?? your imagination is the limits, including jalapeño slices. :cheers:

I don’t use my primo much anymore. I’m gonna have to look into the cheese smokin.
