Two smoked chickens on Saturday can only mean Gumbo on Sunday!!!
I had a hankering for a chicken and sausage gumbo so I smoked up two chickens yesterday.

Ok, I'm ready for the arrows here when I admit that in 52 years, I've Never had Gumbo.....

Some folks like it thick like a chowder I prefer a thinner consistency.

Ok, thanks for that knowledge I now have going ahead.
I'll wait to see yours, I've really been interested in trying it but it's easier to find Sasquatch over a place that makes Gumbo up here.
I definitely want to give it a shot, especially since frost and snow is not far away.

One of my favorite "things" about Gumbo is the Stock or "Roux (ruu)" as it's called.
If done right, it totally separates Gumbo to a class all of it's own.
You mentioned not liking Okra so you might have to change that opinion if you ever have "good" gumbo.
I'd bet and give odds that you would like KAM's regardless of the ingredients

No okra in this one today OUP Debbie is not a big fan of it in gumbos.
Got the chicken de-boned sausage all cut up and in the pot making a stock. The chicken goes back in this evening in the last hour of simmering. While the stock is cooking I skim the oils off the top. I dont like oily gumbo lol.
Bay leaves and two Tbs. of Tony's
Chicken and bones.
Rabideaux's sausage is the absolute best gumbo sausage in my opinion.
Let her cook while I chop veggies and make a roux.

Kam, patience with your wife on the okra, I was never a fan of it, been married 42 years soon, the wife loves it, I told her she could have my share of it, refused to eat gumbo because it had okra in it for ever, so my dearest would make the gumbo okra free, then one day... things changed after years and years, gumbo just isn't good unless it has the okra in it... just my .02¢ Your gumbo looks great!!

Oh she will eat it but her preference is not in gumbos so I usually reserve okra for my big get together pots.

That is awesome Sailor! We just get it from the grocery store. A local spice company TexJoy has it bottled up.
I do love my pot it has made a many a meal.

The bones are out of the stock and the roux is mixed in with the rest of the veggies.
Debbie is fixing to boil up a dozen eggs to drop in the pot.

Everything put together and simmering. Now we get the eggs in and the chicken later.

As OUP mentioned the roux is everything in making a gumbo.
I remember a few years back I tried my first Roux ever for Hollandaise Sauce and it took me 3 times to get it right. Frustrating at first but after I figured out the Milk/Flour and heat issues it came out fantastic.
I definitely want to try this soon so don't mind of I ask questions along the way. I'd like to use a mix of Chedar and Andouile Sausage from my butcher, I would think that would be good.
Ever do it with Crumbled Sausage over Sliced ?
