Bone in Spiral Cut Ham

Good evening all, I am getting ready to do something I have not tried before. My wife picked up a bone in spiral cut ham and wants me to smoke it. She has already removed the bone and left the ham in sort of small pieces.

So with it being in small bits will it work if I lay the ham in foil pans and stager the meat so maybe a 1/8” shows on each piece and then I can brush on the glaze 3 or 4 times during cooking. For cooking I will put my Traeger on super smoke at 220° until it reached about 135°. After cooing she then wants to freeze it and reheat it the day of the party.

I will also cook about 3 lbs of sausage links at the same time. I just don't want to get a bunch of folks sick trying this. :scratch:

Tough situation; might have been easier to have just gotten the ham the day before the party but that’s not where we’re at. Maybe Papa Tom will see this; he’s pretty sharp on these questions. I’d hate to give you incorrect advice. So the ham is thawed in the refrigerator now?

You planning on smoking it today? Was it a “ fully cooked “ ham?

Seems to me that you could go ahead and smoke it but don't glaze it yet - - - put it in the Freezer and then Thaw before the Gathering and Glaze prior to the Gathering???

I apologize been out of town with little to no service.
My advice is since we are serving on the sixth I would get another ham and not debone it. Cook it in a half pan bone down till 135° then rest covered for about 45 minutes and slice and bag.

I would also caution you to not get too much smoke on the ham. It's already cured and cooked, and it's easy to overdue it (made that mistake once). All you need is a kiss of smoke and heat it through. Run your fire nice and clean.

Thanks, I had planned on running super smoke for several hours, guess I will cut it back to about 20 minutes then turn that off and raise the temp a bit and go slow and baste.
