Getting that Christmas Eve gumbo party started.
17° here in Vidor this morning.
Got the two birds seasoned up with some Tony's and on the WSM for a hickory bath.
2.5 hours later we have some smoked yard birds for Christmas Eve gumbo.
More to follow tomorrow friends!

Thank you everyone. Debbie and I had an unexpected trip to the store for a new microwave. Ours decided to start throwing sparks and flames lol.

Gumbo mission complete!
First of two was chicken and sausage.
They all start with a roux!
Chicken and sausage with 18 eggs just a simmering.
Next up brown the teal and sausage.
Then we make a roux with the drudge.
Duck and sausage gumbo simmering.
It got busy once the children and grandchildren arrived and I forgot to get a plated up pic.

Today I am cooking a breakfast fatty for brunch/lunch lol.
A six egg omelette with bacon, ham, jalapeno, onion, potato, tomato and cheese. wrapped in 2 lbs. breakfast sausage and wrapped in bacon.
