Breaking in the Race Crew

Impatience got the better of me and I had to crank her up today! Got her filled and lighted. Just waiting for the right temp and on goes the chicken! Chicken is injected with LC BBQ Fowl Play and hit with SB Clucker dust.

This thing runs like a champ. The biggest learning curve is going to be figuring out the amount of fuel it needs. This was a big bird, but it took over 2 hours to cook, which was too long.

Smoke flavor was spot on, and the seasonings were as expected. I glazed it with SB peach glaze, and everyone was raving.

The pit itself was great. It responded quickly to any adjustments and once it was set, it stayed there.

Needless to say, Im a fan! I just need to get some more practice.

Kinda messed up one of the havles with my tongs too....oops!

I do not. I usually work with whatever is in the different rubs and finish with a glaze.
