Ribs on the way

Postby TX1911 » Sun Jan 15, 2023 3:18 pm

Felt the need to run the drum for some practice and ribs were on top in the freezer, so here we go!

Seasoned with a light coat of spg, followed up with a heavy dose of Hog Waller.

Then on the Race Crew, which is running like a champ in this wind.

Quick check and spritz. Color is coming along nicely.

Looks great; y’all are a lot more scientific than what I’m doing right now on the stick burner. I had to go back to the barn and get more firewood

Color got right faster than I expected. Probably due to my unfamiliarity with the pit. So, into the foil with all the sticky goodness we go!

For the competition’s do they want wet ribs or natural dry ribs?

Cook's choice in the ones we have done. Wet (not sloppy) tends to win though.

I gotta say, these turned out. Not sure if they are quite up to comp standards but they are close. Sweet with the right amount of heat. Will definitely be using this as my base recipe going forward.

Glazed with Sucklebusters honey glaze about 10 minutes before I pulled them.

Good pull-back on the bones, good smoke ring and great color (inside and out) - - - the only way they could look any better would be on MY PLATE

Dangit, I'm full right now but would eat them right now or for breakfast!
