Beef Bacon

Doing two beef navels today for beef bacon. Never done it before. Cured for 20 days, now in the smoker.

Think of it as pork belly. Same difference, different animal. It’s just cured beef bacon. Thin slice, thick slice, cubes, burnt ends………

It is also referred to as bone-in brisket. The naval begins where the packers end.

These are two I did last year. The exposed bones are small rib bones.

So after it is smoked and sliced do you fry it up like bacon?

It can be fried, thick or thin. Just warmed through and eaten like sliced brisket. Anything you would do with pork can be done with beef. It’s just a real fatty cured brisket, so whatever you’d do with brisket you can do with this.

Always wanted to see beef bacon sliced. Appreciate the pics of it. Never see it up by me. I'll have to ask my buddy the butcher to get me some. I take it you cure it 1/4" per day. EQ method or another way to cure it? What was your process?

Just a standard cure with #2 salt, chile de arbol, jalapeños, garlic, black pepper corns, onion. Cured 7 days, can go longer. Smoked like a brisket till probe tender. There is a lot of fat to render like a pork belly. I had to special order it as well.

I used my generic dry cure seasoning, same as I use on my pork belly bacon. Two weeks cure time in the refrigerator, then cold smoked for 8 hours.
