Hi all
Slowly easing into the world of using an offset... so I have started with some chicken (legs and wings), some minced beef, onion and cheddar wrapped in bacon and some mac and cheese.
The smoke flavour is much more subtle (but nicer) than my kamado. Is this to be expected?

Plate looks great, Steve - - - only thing I would do differently is to put more bark on the skin and outside of the meats but I'm sure they all tasted smoky and delicious.

Thanks. I agree. I probably cooked it a bit too quick (only a few degrees above freezing here) as I didn't want to hang around too long! Plus I only used salt and pepper this time - just to get a taste of just the smoke. I like the idea of this bacon wrapped ground beef.
I am going to have to give that a try. I often use just salt and pepper on my chicken I like to taste the chicken.
