Dilemma: long story reheat question

So I'm missing Valentine's Day and was going to give the misses her date tomorrow since I have to fly to Alabama for a week long class then head to work for 5 days and am missing the actual day. I have to work tomorrow for 10-630. Can you smoke a pork tenderloin say until 110* then finish it late in the oven for the other 20*?? I plan to make a Tex mex flavored tenderloin with Street corn and some beans on the side.

I’m not an expert but I would cook it to your desired temp; rest it; vacuum seal it and then warm in warm water to serve; do NOT boil the water

I ended up slicing them thick and pan seared them for a few. The misses loved the meal.
