Pork belly burnt ends

Made som pork belly burnt ends today. Smoked on the Smokefire.

Day started not so good though. Wasn't ready for more snow now but we got some during the night. Smokefire hasn't been used for a while and that caused problems. The pellets was smoldering in the auger so it wouldn't fire. Had to dismantle it. It was not pleasant to handle small screws and cold tools in this weather.
Finally got it up and running.

The burnt ends was rubbed with hogwaller honey bbq rub and went on the smoker for 3 hours. Then in a covered tin pan with butter, brown sugar and honey for 2 hours. Lastly glazed with bbq sauce mixed with apple juice, a little bit of mashed apple and Sriracha sauce. Also smoked a few chili hot dogs. Served with mashed potatoes and caramelized onions.

that looks like torture in the cold having to dismantle and reassemble a pellet burner; However, your efforts look like you were well rewarded by some great looking food!! :chef: :cheers:

We were 4 adults. We had maybe 5 bits left of burnt ends when finished.

The pork belly was 2.5 kg or 5.4 pounds.
