Storing pull pork

On Mon.I smoked three shoulders.I pulled them for pull pork.I put the meat in food saver bags,& put in fridge.Will the meat be ok till Sun.,or should I freeze it?

Anytime I have to hold food more than 2-3 days it gets frozen. It's easy to re-heat in the food saver bags in boiling water or put the meat in a covered pan in the oven or smoker and re-heat at low temp. One nice part about freezing in the bags is you only have to thaw what you need and not all of the meat. :D :D

Seems to me that the FoodSaver DVD that came with the gadget claimed up to two weeks in the fridge. But freezing it should be ok too.

I never did watch that DVD :oops: :dont: I was going by what the Health Dept down here advises for food storage of cooked meat. But this is for a commercial kitchen. Max days for leftovers is on the 5th day it must be thrown out. :roll: :D

Ah, the law hasn't caught up to technology. Go figure. The reason the FS bags work so well is that they are vacuumed sealed, thus inhibiting bacteria growth.

If they is a doubt, go the freezer route :D

I'd freeze 'em up. Like OSD said, it's easy to reheat 8)

I like to freeze PP in foodsaver bags. Before I seal the bag I put in a ice cube or two of frozen apple juice.

When you boil the bag the juice melts and makes the meat tasty.
