5 ls. of thin sliced and 6 lbs. of thick sliced. Sure like my own bacon vs. store bought, and it is relatively easy to do. Here's the thick sliced:

Yep. I have the time to garden, make sausage, bologna, liverwurst, and bacon. Fun, and tastes better than commercial stuff.

you cant possibly know how much I am looking forward to those "days" one of the neighbors kids had her graduation party last night, I fried 30 lbs of fish for them, a thing called Asian catfish, never heard of it till yesterday, tasted good, fried up good, got lots of compliments on the mustard Tabasco beer batter...

No hi-jack intended here :whiteflag: but, ST, I'd like to hear more about the mustard, Tabasco, beer batter if you please - - - I would have to substitute a Cayenne sauce instead of the Tabasco but I imagine it would still get the job done - - - NOW, back to our original programing :whiteflag:

I took about a cup of mustard(yellow from the jar) added a beer, no particular kind, then shot the tabasco to it until it came to a good flavor(maybe 3 or 4 tablespoons), and used it as a dip, then the fish was rolled in the cornmeal, they used Zatarains, (not my choice but I was just the cook) all in all came out good, was a little salty for my taste, but other wise ok, I like to make my own cornmeal mix, It is one cup of cornmeal, one cup of flour, one tablespoon of baking powder, two teaspoons of lemmon pepper, two teaspoons of garlic powder, two teaspoons of onion powder, one teaspoon of cayenne pepper, more if you like it. Fry in peanut oil :pig: :pig: as a side note been thinking about using full sharp paprika to add a twist to it :dont:

Looks great. I made my first batch of homemade bacon last week. Turned out amazing but I cut all mine thick cut and now wish I had split it up like you did. Lesson learned!
