Scratch Pizza, Jimmy’s Ingredients

Returning Saturday from a charity volunteer event in South Dallas, my son Boots Junior and I got stuck in a ferocious rain storm in downtown Dallas. Solution? Of course, we holed up at Jimmy’s Food Store at Bryan and Fitzhugh streets, an old school Dallas icon and a true Italian neighborhood grocery. One of my favorite places in the world, you can actually buy a glass of Italian wine and an Italian sub and drink and eat while you wheel yer cart around or simply sit at one of the small bistro tables in the front window.

So we are in Jimmy’s, and you know Boots’s got to do what Boots has got to do - we gonna makea pizza pie, Paisan, Capisce?

Jimmy’s can or does sell pretty much anything they want to make themselves. So I picked up a fresh made ball of pizza dough, fresh house made mild Italian chicken sausage, buffalo mozzarella, fresh basil, roasted red peppers, fresh cry meanie mushrooms, and some first rate marinara sauce.

Through the miracle of time lapse photography (Time lapsed between each shot as I took a swig of beer), You can judge the results yourself. The pizza turned out to be a magic trick, there it was one minute right there on the counter, and the next minute it was completely vanished.

Dang Boots that is killer. I gotta get down to Jimmys. I heard their muffuletta is the closest we can get to the real deal here in Big D.

Great looking pie, Boots! That sauce though.. That stuff looks legit! The rich, tomato flavor just reaches out from the picture to smack the viewer. Give more info on this sauce and whether or not it is available for purchase!!

Sauce is commercial- Victoria’s Marinara - but the trick is to pour it in a fine mesh strainer for an hour or two first and let all the excess water drain out. This reduces the sauce down to the basic good stuff and helps keep the pizza from getting soggy. I think though my favorite commercial sauces so far are RAOs marinara and Victoria fradiavolo. Later has a really nice light pepper kick to it.

Raos has a huge following. Many think that sauce is very special. I’ve never seen it but my Italians use it for a quick meal. Thanks for the strainer idea.
