So, on my “wanderinto” ol Costco the other day for the pork belly, I of course did a flyby of the chicken cooler too, and they had these large family packs of peglegs that were just exceptionally meaty, like they came off some fryers. Most I see these days are puny like they came off a pullet, so this naturally caught my eye. And only a buck-69 a pound so I got 3 pounds for a flat fiver, can’t beat that with a drumstick. Attention KMart Shoppers! Zing.
Got em home and brined for 3 days in a mixture of rub, barbecue sauce and Shiner Bock beer; just let ‘em swim in it like drunk college kids at Padre, under the water the whole time.
Come Saturday Mrs Boots says to me “I want burger!!”. Had that binary look in her eye, husband either cook me burgers or husband will die. No middle grounds with her and burgers are food so I says to her like a Cajun, “OK I’m gonna did that”. This is how one stays married 27 years and still counting 20 digits and a nose still attached - woman want burger, you make dem burger and it ain’t toefoo, either. Angus, which by the way is a mean little breed of cow and dumber than a bag full of wrenches. So I had no remorse eating em you understand.
So grilled the burgers over a live fire of all mesquite Saturday and slow smoked the peglegs with all hickory Sunday. Aaaarrrrrrr, man were they all good. Jean Lafitte the pirate would been proud, never had a better pegleg.
