Smokin’ in the rain

Had a good steady rain today which made me really appreciate the covered patio. Don’t mind the rain, only problem is it’s supposed to do it every day for the next week.

Cooked a pork butt rubbed in Sucklebusters Texas Pecan for dinner tonight. Used the same rub on a chicken which my wife was gracious enough to turn into chicken salad. Also did a meatloaf that will be finished off in the oven tomorrow night for dinner.

Did you short cook that meatloaf? And how are you going to finish it off, just plain like that?

Hey she considers you a friend now. Means you are in good standings

We always did ketchup as well with the non smoked meatloaf. I just like the bbq sauce on the smoked loaf. Not sure what I’LP either do head country or sweet baby rays. Just know we have those in the fridge. I’m out right now but the Sucklebusters honey sauce is really good on it

That meatloaf looks really really good. I just don't fire my pit up often enough. Next big cook I do I may have to put a couple of those together and vacuum pack some meal portions. Gravy or no gravy with it?

And yes, we are friends today, because I am offshore and she is in Wisconsin visiting her mom. When she gets home, and I get home, I am sure to find myself on the list at some point.

Lol - friends today, but prepare to assume battle positions

Been a while since I froze a meatloaf but I pre froze it and vacuum sealed it. After that Not sure if I added dripping but it wouldn’t hurt.

Thanks Piney. It was rubbed in dukes Mayo and coated with TX Pecan. Made an excellent lunch in the wife’s chicken salad
