I heard Rodney Scott on a podcast (Dave Chang Show) and ended up snagging his new cookbook off Amazon. He had a fish recipe that looked interesting, so I took inspiration from it for some trout. I made some foil boats, allowed them to warm up on the kettle with some butter. I seasoned the filets with Sucklebusters SPG and placed them on the grill with a cold pat of butter on top. I basted them a couple times with the melted butter and pulled around 135. They were fantastic. Good grilled flavor with just enough smoke flavor from the lump charcoal. I like cooking fish this way now.

Looks great but I cant catch trout big enough to get filets like that lol
PB AustinLX, Weber Performer, Weber E310 , 250g trailer pit , 36" cowboy grill, bunch of other ways to burn food.
