This past weekend I was messing around with brines and injections and cooking temps for our competition chickens. Not a bad combination we will give it a shot.

Thank you Rambo. Typically I run around 325° to 350° I slowed my temps down to 275° to 300°. It did not really add much cook time and I was able to keep the skin intact for the most part.

Thanks KAM. Another question; they are shiny; did you brush something on towards the end of the cooking?

You are very welcome Sir. It is a glaze I cooked up that was applied just before taking the birds off. I let it set for 5 minutes.
