We got some boneless pork chops and gave them my Modified Cornell Treatment which is, basically, Mayo and Seasonings. They weren't bad but so lean that next time, I will emulate OUP and get country ribs.

One good thing about this thin chops: they grill very fast (just a couple of minutes per side).

Next time try brining them in a simple brine for about 3 hours. 1/2 gallon of chilled water, 1/2 cup Kosher salt, 1/3 cup brown sugar. Grill them hot and fast to an internal temp of 145°.
