I’ve done the individual short ribs before but came across these at H‑E‑B so gave them a shot. Kosher salt and butcher grind pepper. B&B lump with some pecan chunks. 250ish till 170 internal, wrapped with butcher paper till 205. Let them rest a hour or so and dinner was served. Really enjoyed them, super tender and very similar to brisket. Will be doing again. The pups enjoyed the bones after. Had to take them away from them, they kept fighting over them.

My understanding is when they cook they become brittle and can splinter off. I’m no expert, I used to give them to mine too.

Thanks gang. We’ve got 3 dachshunds and there was 4 bones. Each got one for a few minutes and of course they all wanted each other’s instead of the one they had. Took them away from them and threw away. They of course never get chicken bones unless raw. Beef bones I’m pretty comfortable letting them get a few bites on. I caught one the other day that was just about done polishing off a roach bait I had put in the garage. No effects thank goodness.
