Hatch the Ripper
Had some cheap Eckrich I need to cook up. Thawed some roasted hatch and wrapped the links in hatch and bacon. Charcoal firing up, will add a pecan split and let the ripping begin. Updates to follow.

Two loaded on a couple flour tortillas, velvetta verde, lettuce, cilantro and a squeeze of lime. They lasted 7.5 minutes on the plate.

Thanks all. Made a nice NHRA mid-race meal. Just finished off the last of them for lunch. They’re rich, filling and darn delicious.
