Smoke away. Pretty much the longer the better.
You need to take the wrapper off but not remove the smooth surface skin.
I like to take them and cut them in half lengthwise so you end up with 2 half moon pieces and then score each piece once down the middle of the curved side so you don't end up with curly pieces like when you fry them w/o scores. Some folks like to go all artsy phartsy and cross score the logs at angles but I can't stand that since it makes it hard to get good slices to fry and make sandwiches that way.
