First try on the Trompo.
Chicken Schwarma - boneless thighs marinaded in EVOO, lemon juice, lemon zest, cumin, coriander, smoked paprika, turmeric, ground cinnamon and LOTS of garlic.
I spun the marinade up in a food processor yesterday to a smooth mixture, and let it get happy overnight before I marinaded the meat this morning for 6 hours.
On the BGE with a chunk of apple wood at 350 indirect to an IT of 170. Took about two and half hours.
It's resting now. I'm going to shave off slices onto tortillas for dinner.
Dinner is going to rock!

It doesn't. I set it on the heat deflector and it cooked like an oven.

It doesn't. I set it on the heat deflector and it cooked like an oven.

Definite smoke. I put a good sized chunk of apple on the fire before I put in the deflector and trompo.
