Pork Chops, Pineapples and Possibilities
Picked up a couple of nice THICK Bone-In Poke Chops the other day with the idea in mind to stuff them and cook them over Kingsford. Well, SWMBO, said that she'd rather have a regular thin one just grilled. So I've decided to go ahead and fix mine with the pocket stuffed full of Pineapple, Shrimp and Pineapple Salsa with grilled Pineapple Rings on the side/top? I boned hers to make three nice filets witch will be seasoned and grilled with Bacon and Own-Yawn topping. Sides will be just sliced fresh Veggies ???? Not sure just yet.
Took a lot of hand prep to get things ready for the Kingsford but now I'm just waiting for the Lunch Bell to Ring.

That big chop has pretty color. Not sure why I don’t eat more pork than I do.

Funny Story, this may be a little long so hang in there reading. My Wife’s Dad, who is now 92, took his elderly Uncle to the Dr. Back in the 90’s. The Uncle was an “ Old Maid”, never married Farmer. He lived on 150 acres, farmed vegetables, raised a lot of hogs, and they had a few cattle. They had an old O’Keefe Merritt gas stove and at any time of the day you could walk past that stove and there would be homemade biscuits and a piece or two of ham, sausage, or bacon. My Father in Law took Uncle Zack to the Dr when he got up in his 80’s. When they returned home my FIL explained to the old Uncle that the Dr had told him that he needed to stop eating pork, that it was bad for him. The old Uncle didn’t cuss so this was his response: Shaw Boy, the only thing wrong with Pork is running out of it”

That’s the Best stuff right there. There is another place at exit 92 in Duson that has good boudin as well. But there are 3 or 4 places within 5 miles or so that are too notch

Thanks, Brother John, I milked one of the Boudin casings and fried it up yesterday. It was good but I was a little disappointed - - - it's way too spicey for Sherry so I'll be snack'n on these by myself. Think I'll do a couple of links over some Kingsford next time.

I have never had them short links before. They sell bags 10 pound bags of longer links. Not sure if they are different on the spice scale though. I’ll be going through there on my way home in a couple of hours. Bet they will be busy today.

Great looking plate Parts. Looks like some work but the payoff was worth it - also, love me some Boudin. Best Stop is our first choice when we get near Scott. Been a few years though.
