Quishadillas

Inspired by some of the great plates seen here, we took leftover grilled chicken with BBQ sauce, frijoles refritos from a can, various cheeses, two tortillas, and this came out:

Picante sauce, sour cream, and that Herdez guac sauce on top. But my culinary mojo failed me once again. The bean layer was too thick and the 'dillas squished. ALL over the place. Next time, beans on the side.

Tasted good, though!

Great idea. Those tortillas are kinda like a crescent wrench; you can do a lot with them

Heaven forbid! Though we do eat sushi rolls, sometimes.

We stumbled across mini tortillas yesterday, so here they are:mini-dillas, with chopped rotisserie chicken and cheese. No bean filling to squish it up. We had a bean dip on the side with salsa. Sour cream and Herdez on top here.

The tomato product, pretty indistinguishable in color from the pepperoni, came from our Better Bush tomatoes. They're problem children. Huge fruits that look red, but start to rot before they turn fully ripe. I cooked one down today just for the pizzadila. The 'dilla texture was more cracker-like but it tasted good.

And I just realized this thread is in the wrong sub-forum. :oops: Shouldn't it be in the Outpost? :oops: :oops: :dont:

I eat very little bread but lots of tortillas. Sherry used to eat lots of Wheat Bread but she's started eating English Muffins toasted in the oven so a loaf of bread can very easily spoil at our house these days. :dont: :whiteflag:

With just the two of us, that can happen here as well. The freezer is our friend! :laughing7:
