Grilled Date & Cream Cheese Stuffed Pork Loin Roulade

Postby tex_toby » Mon Aug 01, 2022 8:04 am

I spent Sunday playing with my food. It all started as Mrs Tex and I were combat Costco shopping on a Saturday and we passed a pallet of dates. That got the wheels turning in my head and decided that I would make a stuffed pork loin roulade. I gathered up all of my ingredients and started putting it together yesterday morning. I bought a whole pork loin and cut it in half, and froze one half for another day. I butterflied the other half flat, seasoned with Hog Waller then added a layer of softened cream cheese and topped with chopped dates. I rolled it all back up and tossed in the freezer for a few hours to stiffen up a bit enough to hold shape to add a bacon weave for some pork on pork action. :pig: :pig: After 3 hours or so, I weaved a mat of bacon to wrap around the loin and then back to the freezer a couple more hours. It was then time to fire up the grill. I grilled indirectly for about an hour and a half until it was ready. While all of that was going on, I had also put on a batch of pinto beans in the crockpot in the morning. It all turned out great.

Dates are wonderful. To be honest, I had never tried one until I reached adulthood. Dates are the fruits produced by Date Palm Trees. They are about the size of your thumb and are very sweet. If you have never tried one, I say go for it. They are even good for you too! :D I also like to chop them up and put them in homemade oatmeal cookies https://en.wikipedia.org/wiki/Date_palm

I asked my wife what they were after I saw your post. She said they were kind of sweet, which would make sense pairing it with the pork. She said her mom used to make some sort of date bars out of them when they were kids.

Did you cook that on the gasser at your outdoor kitchen or on something else. I see grill grates on whatever it was.

I did - I cooked indirectly on my Summerset gas grill. Burners on each end with loin in the middle. I did not use the middle burner. I replaced the OEM grates with custom cut Grill Grates. Love them!

Who or where did you get the grates cut at? And are they that much better than factory grates? Flare up and such?

Ordered them directly from grillgrate.com. They have many that are already sized for popular grill models. If not, you send them measurements and they will cut them. To me - totally worth it and better. They stop flareups and add amazing grill marks. Just my opinion, but no regrets at all with the purchase.

The grates are for the built in gasser here at the kitchen/bar. I am still processing the situation for the lake. Because the boy has a weber he doesn't use anymore so I think I may get out of that deal for free even.
