Well THAT'S TOO LONG
I'm finally Pelletizing some St. Louie Ribs, 3-2-1 Style and I'm really looking forward to Lunch Time.
I managed to get them on the Pit Boss by 6:15 AM, even after having to manually ignite the Pellets. (my first time to do that)
So they've been on 225 almost long enuff to wrap and go to Phase 2. Two sides are BBQ Beans and Tater Salad.
This Tater Salad is Sherry's secret family recipe that had me cutting, chopping, boiling and mixing at 10PM last night.
BECAUSE SWMBO said it's better if it sits in the Frig overnight.
Here's what'sup so far and I'll post more pics as the cook progresses

Stage 2 begins - - - apple juice and ribs inside the Foil Wrap. I'm really excited about this Rack especially since I really poured the Smoke to it for a couple of hours and it's Pecan Smoke.

I don't think so but I may have - - - - I think the Pellets might have been too old and have accumulated too much moisture. I have used very very old pellets before without a problem but this time they would NOT light from the Pit Boss "glow plug"

They're so tender (fall off the bone) and are hard to slice without ending up with ?pulled pork?
