Sirloin kind of night

Ran by Costco yesterday to get a couple briskets and they had some wonderful looking Prime top sirloins, so I grabbed em. We had baseball today so it was a high temp cooking night.

Started seasoning before I realized I forgot to take a picture.

Seasoned them well with the Texas Tech Steak Seasoning my niece brought me.

Reverse seared. Put them on the smokefire at 225⁰ until the internal temp hit 100⁰. Then over to the Vision kamado at 700⁰ until they hit 128⁰. Pulled, rested and eaten. The wife made some fantastic wilted spinach and twice baked potatoes. But I didn't get a picture of the whole plate. Tomorrow, more baseball!

Looks like perfection. I never did a 2 step steak cook and now i gotta try it
