Decided on pork chops for dinner tonight. Injected with Meat Church pork injection, which made a helluva mess. Let them rest for a few hours.

Set the Vision up for indirect and ran it up to 400⁰

Seasoned the chops with Honey Hog, and set them indirect until the internal temp reached 130⁰

Then, a quick sear, followed by a glaze with a mixture of SB Honey glaze and Rib Candy Cranberry habanero.

These turned out really, really well. Something unexpected, the injection prevented the sear marks I am used to. But the flavor was there.

Forgot to get a picture of the plate again. My bride made some amazing butternut squash and brussel sprouts. It really was a good dinner.
