I cooked tonight’s picanha flipity flip every 30 seconds with some cheesy taters and onions.
Tomorrow the rest of the picanha will be sous vide and seared… mushrooms will be on the side

Great looking dinner, it's very interesting to me that this cut is not well known down south. I thought for sure you guys would have not only eaten this before but have cooked it as well.
I think you guys would love it, it's excellent.
I can't wait to hear about the SV version

Picanha, aka sirloin cap, rump cap, culotte, what they serve in Brazilian restaurants.
Similar to trip tip, but better.
I never had it until this year myself.

Well, I had the other half in the SV when our daughter called and wanted us to come up for pizza and wings.
I bumped the temp up to 135 and let it go for about 5 hours.

Put it in an ice bath and into fridge for tomorrow.

I hope that the 135 is ok, it was in for nearly 5 hours.

I would think it would be ok, if it's a bit overcooked or tough cube it up and make a stew with it in the slow cooker.
Either way it's gonna be good.
That one pic you put up reminds me of how my Chicken Fried Steak looks when it's cut.

Should be fine. What’s your plan to reheat?
I’d probably SV for an hour at 120 then finish with a cast iron sear.

Picanha is one of my go to cuts. Usually can find at Costco for $6.99/lb, in a cryovac bag of 2. Not much waste if you want to thin down the fat cap but it really isn’t necessary.

Yeah, at 131*, 68 minutes is good. As long as it cooled down fast enough.

I did indeed put the other half back in the next day for 2 1/2 hrs…seared in CI. It was excellent, but I didn’t take any pics.

I’ve been buying them at Wild Fork Foods. I never see them anywhere else around here. I wonder if the new HEBs carry them?!
