I bought these a few weeks ago and I have no idea of what they really are or how to cook them. They look like beef, but I'm not certain.
I'm going to cook them tomorrow, and I'm thinking about going hot and fast.
Has anyone here ever seen these?

Every thing I googled said they were Beef - - - hot and fast sounds good to me but so does cooking, cutting up and using in a beef stew or another beef dish.

I didn't cook them until this evening. They marinaded in McCormick's Brazilian Steakhouse overnight.
They went hot and fast on the BGE.
They taste great, but some spots are a little chewy.
If I find these again, I will smoke low and slow and then braise them.
It was a good tasting experiment and first time cook.

Maybe a Ripper style - - - finish them off with bacon wrapped around them and put in a Hogie BUn ???
