Pork Brisket

Made some pork brisket and it was pretty awesome

First started with brisket and pork belly

Sliced them into 1” slices

Then used Moo Gloo to glue the meat together. I alternated the brisket then pork on bed of Saran Wrap to make it easier to wrap afterwards. I used the moo gloo liberally between slices to assure meat coverage.

You can see the powder between the slices above

Then i Saran wrapped and left in frig overnight and to my surprise it stuck together !! Moo gloo works!!

I then rubbed down with favorite brisket and pork rubs

Smoked on the pit!! I just felt it was gonna fall apart but it didn’t!!

And slices it up and made a great center piece for Thanksgiving !!

I plan to do it again for Christmas since I am going to my sisters house as 1 of our dishes. I would consider this BBQ version of the "TurDucken" LOL... It tasted good by itself but better with a BBQ sauce.
