6 Cheese Prime Rib Sliders

6 Cheese Prime Rib Sliders
Well, I finally made it to slicing up the second Rib Roast that came off the smoker last week. Made sure it was nice and cold, just under frozen so I could use my 1/8" channeled slicing board my brother made years ago.
First, I Sliced about 1/16" - 1/8" thick and trimmed the fat pieces off.
Then I laid out a full loaf of Hawaiian Bread, sliced it in half, hit with a light coat of Mayo and Soulful Seasoned Salt.
First layer on one side was Sliced white American Cheese, then Pepperoni on one side, then the thinly Sliced Rib Roast. Layered a blend of Shredded Monterey Jack, Mild Chedder, Asadero and Quesadilla Cheese. Topped off with slices of Fresh Mozzarella.
Cooked in the Convection oven for 10 minutes and just finished eating the absolute BEST Sliders we've ever eaten... Topped it off with a Shiner Bock, first one ever and I'm now a fan

I dropped the ball and forgot to save all of the drippings because i love to mix that with a little Beef Base and make some Au Jus for the sliders.
