Pelletized 3-2-1 St. Louie's for Tomorrow

Found a nice rack of St. Louie Bonze with a good price included so I'll be soaking them tonight with Honey Mustard and Suckle Buster's Honey BBQ Rub. Then I'll spritz them with Apple Juice every hour thru the first 3 hours. After the 2 hour wrap cook, they will get glazed with Suckle Buster's Chipotle Sauce and accompanied on the plate by Sherry's homemade Tater Salad and a can of Trappey's Jalapeno Pintos.
Yum Yum, I can't hardly wait.

I found some ribs at HEB too, yesterday.

And some .77/lb Butt!

Well, today is a "bla day" - - - not only were the ribs not the usual great fall of the bone ribs - - - the taste was below par and we were disappointed. Maybe we'll be able to ?enjoy? some Pulled Pork Sammies in a couple of days.

First time for me - - - I was blaming myself at first and then I thought of how many times I've done these before and how well the Pellet Pooper performed yesterday - - - - "maybe too much shelf time??"

Many times competing I have had two racks sliced on the table and one was nope not today while the other was these get turned in. Same cook time, seasonings and injection. It is the pork not the cook most times.

I agree wholeheartedly with kam, it must be the pork, I have had the same outcome with brisket, who can afford that these days?
Success will come just keep trying, take good notes of the cook and get ya another rack there is always water a pot and a fire... nope no boil for me!! :laughing7: :laughing7:

I'm pretty sure it was not "I" but it's given me a new way of shopping the Meat Dept. I think from now on, I'll buy and cook the next day - - - no more freezer time and I'll inspect it real good for color and etc.

Glad to see that I'm not the only one experiencing days like this. I certainly have my share.
