Fajita Night - Inside skirt steak from H-E-B seasoned with Sucklebusters SPG & 1836 with sautéed tri-colored bell peppers and onions. Homemade Chuy's-style salsa with deep fried corn tortilla chips.

Fresh fried chips and taco shells are a must in our house. I always use white corn tortillas.

Next time you are bored try this simple salsa recipe. It was given to me by a cook/waitress in a little dive Mexican eatery in Brackettville called The Crazy chicken.
Three large roasted whole jalapenos one large can of whole tomatoes the cheap brands work best.
Once the jalapenos are roasted add them and the tomatoes juice and all to a blender and mix it up. Simmer in a pot for 5 minutes let cool and hang on. The heat is governed by the peppers.
Debbie roasts the peppers in a cast iron skillet till they are charred.

White corn tortillas are a requirement for us. Mrs Tex can't have yellow corn as it tears her up with acid reflux. For some reason, white corn doesn't bother her.

I completely understand about the acid reflux there are some things that effect me bad.

Over the years we had two deer leases there. The first was north of town by the movie set. Later on we acquired one in Spofford south of town. I spent a lot of time in the area managing the leases. I stayed at Fort Clark when I was in town, I loved it out there.

Being a 4th Generation Bowie, that movie set was a must for my Son and I to go see when we went out there to Deer Hunt.
I've had the DVD for years and can't count the times I've gotten the urge to just watch it again.

I was hopping KAM would see this and chime back in...
What years did you attend Alamo Village?
I knew Happy (James T & his wife Virgina) Shahan, on a personal level, his son, daughter and their kids...
The Alamo, Bandolero, Johnny Rodriquez, the memories just go on..
The granddaughter bailed out of her husband's truck and hugged my neck at the DPS Head quarters in front of coworkers, I kinda had to explain that one to lots of people..
We all went to church together back when...

We hunted next to the set around early to mid 80's. I had my deer processed in town by a place called Chui's I believe. Best pan deer sausage in Texas. The place we leased all I remember was a guy named Tony.
Spofford we leased from the Quigley's and Mr. Nance ran the cattle. We left Spofford years ago.

Chuy Munoz, had two adopted sons, one owns a store today as of last contact(I went to school with both, Robert & Joe).
Tony Frerich the Frerichs has multiple relatives, one of which owned the "crazy chicken" others were in the ranching business.
Don, Nance worked for the railroad and moonlighted in the ranching world, had a son named Donnie at last contact works for Texas parks & wildlife as a park peace officer...
Next to the movie set would have been the Slubar ranch Richard is passed and retired from Department of Public Safety... son's name is Dustin, trooper for DPS last contact was Rosenburg Texas.
Right on the north side of town was a Motorola Radio shop, and that would have been yours truly. back when... we sold out in 92 and moved on to greener pastures..
Kinney county had lots of deep roots for me, the wife still can't believe I moved her there back then, but now I am retired, and she gets to pick where we live..(and she will never forget the hole in the wall place I came from )
