Caramelized Alaskan salmon with risotto

This was fantastic!

Caramelized Alaskan silver salmon with lemon thyme risotto and sweet peas with a side of tricolor carrots.

My wife got home and said we haven't eaten so when's dinner? I said soon so she opened the refrigerator and swallowed two slices of pizza and walked upstairs. 20 minutes later I sent both my youngest and wife this pic. The misses came down, grabbed a plate and without saying a word, she ate the plate clean. The risotto was the best flavored one to date.

What's funny in all of this is I shopped with no one, bought the largest size whole fillet they had and my youngest went back for another slice for herself. She actually spoke unlike my wife who was left satisfied and speechless. Natalie said I love salmon and went back to study for her AP exams.

My family likes salmon done two different ways:
1. Asian style. Spray on soy sauce. It's about a couple pumps on each section, use a microplaner to add ginger to the fillet with black pepper, slivered green onions and heat up some olive oil. At the end of the fish being to your liking drizzle the oil on top. It should crackle and seal up the exterior. You don't use much oil on the fish.

2. Caramelized salmon: black pepper to your liking and really any salmon rub but you add additional brown sugar on top. More than you'd think and grill it. It's that simple. The salmon rub I had was from Tom Douglas here in Seattle. He has a small chain of restaurants but his product is excellent. I had never used it with the brown sugar one I do and it was excellent.
