Meet Beef Cutlet Diablo

For Diablo's we have used chicken breast as well as thigh meat but then I thought what about Beef?
These are pretty awesome, Debbie and I love them served with a salad and some of her Cilantro Pesto.
I did not get a plate up pic I was going in a lot of directions Saturday night.
The peppers cored and stuffed with Monterey Jack cheese.

Then take a tenderized cutlet and lightly pound it out a bit.

Then roll up a pepper.

Once all of them are prepped i seasoned them with Fiesta brand Uncle Chris's Gourmet steak seasoning.

Then onto the PK gill

Let them rest a bit then dig in.

Hopefully next time I get some plate up pics. The pesto is awesome for these.

Kevin, after you put the cheese in, did you wrap them as a whole jalp? Covering the cheese with the other half of the jalp?

Yes I did Greg. Leaving the end on the jalapeno intact and cleaning out the seeds and membrane makes for a nice cheese capsule when both halves are put back together.
