Poor man’s filet mignon

After reading kam’s post and chasing the video decided to give it a try. Got a side-eye from the wife but we’ll see.

They’re an inch thick so 18:30 should be ready.

They were 1.51 and 1.52 in weight and graded choice. Honestly I think they just made the grade but at 50% off I couldn’t pass them up. Basically 2 for 1!

Salt pepper garlic and coriander. Charcoal and pecan splits.
