thanks, I did learn something from this Cook today, however - - - I dont' know if it was the particular cut, being a full rack of Spareribs instead of St. Louis Cut or not BUT the texture and taste of this one wasn't near as tender and tasty as the St Louies and Baby Backs that I've done in the past - - - hopefully it was just one of those Cuts that wasn't high quality - - - heaven knows that I've sure had that happen with Steak before :dont: :roll:

Tender or not that plate look's just beautiful. Lord knows I had a few racks that were a bit tough. I took a meat class years ago and found out how to pick quality beef and pork from the garbage. When it comes to finding a tender pork rib look for a rounder bone instead of a flat bone, the rounder the bone the younger and more tender the pork will be. I hope this helps you out.
