Inspired by a recent post about ham (sorry that I forgot who did it) , we decided to try making, at least, Canadian bacon.
Got these from Costco. The price was LOW. The surprise came when we opened up one of the two vac packages and found one normal sized loin and a skinny little piece tucked next to it. We cut them up anyway. Brined them a couple of hours (which was probably not necessary).
Seasoned three ways for each piece (s): SB Competition, Jane's Crazy Sweet Lime, and Sailor's Everyone In The Drink Leftover Rub Mix.
Done on the Kamander with apple, much, much sooner than we thought: about an hour at 275°.
Smoky and well-seasoned! We didn't mean to but ate the smallest piece then and there, with chow chow, a green salad and the last of my baked bean side.
There's still one piece in the vac-sealed pack left. It's going up this weekend.

After only 1/2 hr the smaller pieces read well over 150 deg so I thiught they were done. But they still looked undercooked & put them back with the bigger pieces.
After an hour everything looked much better and they all came off the rig.

Nicely done, bet it was great. You should try Canadian Peameal Bacon. Once you try that, you'll never go back to regular Canadian bacon.

Thank you, everyone! I think half those 'pepper flakes' are actually black sesame seeds, which BURN nicely.
