Rack of Pork

I ran across a rack of pork yesterday at Costco, so that's what I grilled up last night. Seasoned with SuckleBusters Hog Waller indirect at 350 and pulled when it reached 135. My plan was to let it rest and raise temp on the counter to 145 before I cut into it. I probably should have pulled it even a little earlier because the temp was still raising when it hit 145. I went ahead and cut into it to stop it from cooking further, but it dripped a lot of juices in doing so. The meat was still very juicy though - it just made for a bit of a mess. While it was resting, I grilled a side of grilled asparagus to go along with it. :pig: :pig: :pig:

So I was a little hesitant how I would re-heat the leftovers without drying them out. I ended up putting them in a frying pan with a can of Cream of Mushroom soup and about 1/4 cup of water to thin it down a smidge. Heated it all up flipping the chops a few times until warmed through again to 145 degrees. Made up a side of rice and MAN, it was another righteous, completely different meal and the pork was just as juicy as the first time. I'm not particularly use to taking pics of my leftovers, but this would have been worthy had I thought about it. At the end of the day, I still had 4 more leftover chops, so I vacuum sealed them and tossed in the freezer for another couple of quick meals down the road. For $17, this chunk of meat will have fed both Mrs Tex and I four different meals. That's pretty cheap eating these days.
