I was in this last year as well and was my first and now my second sanctioned event iv cooked in. Last year I had the wsm in tow and made final table in brisket, but nothing else. I learned a lot and had a great time.

I'm a year older and showed up with a new Shirley patio and the wsm serving as a chicken cooker.

Had a little better setup and a different team, once again had a blast and LOVE a stick burner. Made final table in chicken, nothing in ribs, 10th place pulled pork, and walked for a 4th place brisket call!!!!!

I deserved everything I got in ribs, chicken was ok but somewhere between testing and competitions,my spice disappeared and I need to adjust the time that I sauce. Pulled pork I thought was good, and the brisket smoke, flavor,and looks were great. Could have cooked another 30 mins probably.

Really enjoyed the event and feel really good about the scores.

Thanks boys. I finally started testing chicken a week before the comp and now all I can think of is making better chicken and ribs. I'm a bit disappointed with both of those turnins.

I want to be more prepared and ready for whatever I need up in next.

And going brew beer with a buddy tonight to fill this trophy. :)
