I will be there, other than supplying the pit, I have very little to do with the cooking operation. They do just fine without me cooking. They finished 10th last year. I am just the main sponsor basically. So in other words, I'm Otis.

My skills include staying up all night, stoking fires, taking out trash, and generally following directions. I enjoy good friends, good food, moderately priced cigars, top shelf bourbon, and single malt highland scotch. :lol:

Some good skills to have indeed .. Aint no show like the Rodeo .. Spent several years in the big tent down there and feel honored to have helped the fine folks with Karma Queue.
Hoping you find a way to get into the show.

I’m head cook for a team at wcbbq. The team name is third coast cookers. We are full this year but perhaps next year? Come visit you’ll see me on the pit. Feeding 1000-1400 people over that weekend so pretty busy.

Well 39 in brisket, 137 chicken, and a miserable 229 in ribs!! Not bad but not great...but happy with the HLSR results!!

I just have to wonder if there’s any politics involved in their judging. I’d guess KAM would be the most qualified to answer that but probably won’t and I don’t blame him

The Houston Livestock Show and Rodeo is a highly political organization in itself. I really don't care to pass judgement on the judging process itself. Especially after 7-S, the main team I am associated with had a terrible year this year, compared to a 10th overall last year. But if I were a betting man, which I am, I suspect anything that large is ripe for some shennanigans.

I believe there is!! Our person screwed both our Dutch oven entry with a broken box had us wait while she called and get us another box which made the Dutch oven dessert cool off faster. Then on ribs she handed box over and marked it with a pen inside the box!!! I made couple calls to make sure i wasn’t to be disqualified. They said no issue but i worry there was something there that might have revealed team with that mark.
