That looks amazing. Now I'm craving for a plate of ribs.
Kinda indulged myself a bit lately because I bought a set of touren wheels and toyo tires. Ready for more road trip.

Brother Pinoy is right. Salt and pepper or yer favorite brisket rub works. Emphasis on the low; like brisket they got a lot of fat you’ll want to render out, but a much more delicate texture so if you run high heat you’ll either abuse them or have a really short time window to stick the landing. One could quick sear then slow finish.
