The way Ms Boots’ Mom made ‘em. 6 hours seasoned and braised brisket in a Dutch oven, then shredded and dressed in a Hatch tortilla with some Cacique sauce.

Well, Mommas method surely worked because those look excellent !!
I'm a Huge fan of cooking with Dutch Ovens, and actually anything Cast Iron.

Something about them just seems to give us more confidence when using them imho.

These right here look to be tender as can be and being seasoned for 6 hrs and braised they had to be delicious.

Kudos to the Mommas and you for executing them Sir

I think she got em at Central Market (HEB). They carry all kinds of exotic stuff.

thank you sir. Parts, I answered you wrong back then, she informs me the Hatch tortillas came from Market Street. They are the flour/corn blend kind.

Gonna try and make my own from scratch this weekend.

Hope your still on the mend BTW.

Got me a molcajete round the house somewhere, once made guacamole with it. Never again, took all day to clean the stuff outta all the little cracks; I think I ended up boiling it clean. Plus, while I will be MAKING these from scratch, I am not STARTING them from scratch - it will be store bought flour.

I am too old grumpy irritable surley testy techy crabby out of sorts and and and irascible already to grind my own wheat. It could drive me to bad habits, like drinking (ooops, I've already driven there so much I am now a commuter).

Now, with the corn I am growing in the garden, that might be different come August.... hmmmmmmmmmmm.
