This is the recipe I use for making meatballs. A basic recipe that I add to, to make different flavored meatballs. A couple variations are in the tips section of the recipe.
Fine tune it to suit your tastes.
Meatballs
1 pound hamburger
¼ pound ground pork (not pork sausage)
½ cup dry bread crumbs
¼ cup milk
2 tbs finely chopped onion
1 tsp salt
1 tsp black pepper
1 tsp Worcestershire sauce
1 egg-beaten
1 - mix ingredients
2 - shape into balls. makes approximately 24--1 1/2" balls.
3 - cook over medium heat, turning occasionally, until brown, about 20 minutes. or cook in an ungreased oblong pan in a 400* oven until light brown, about 20 - 25 minutes.
4 - cook in smoker at 230* . Takes about 1 - 1 1/2 hours.
Cooking Tips
For Italian meatballs, use Italian flavored bread crumbs instead of plain. Add in 1/2 tsp garlic powder, 1/2 tsp Oregano, 1/4 tsp basil, and 1/4 tsp Thyme.
For spicy meatballs add in 1/2 tsp garlic powder, 1/2 tsp Cayenne pepper, and 1/2 tsp chili powder. Then coat the outside of the meatballs with your favorite BBQ rub.

Well I hate to see folks braggin on their meatballs when I got the ultimate recipe from a janunine Roman Catholic Eyetalian Lady from Noo Yawk City. According to her hubby..her Daddy used to eat the eyeballs out of the roasted lambs. Now is that Eyetalian or whut?
