Has anyone pork belly before?

Hiya,

I have a nice piece of pork belly and I was wondering if anyone had smoked one before? Love to check your recipe!

Yes! Pork Belly Burnt Ends or cure for bacon. Can’t go wrong either way.

For the burnt ends google Meat Church or How To BBQ Right. Both have really good methods.

Treat it as you would a brisket. Rub down with salt/pepper and anything else that appeals to you, then smoke as you would a small brisket. Wrap in pink butcher paper for the last several hours if you want. It will cut down on the bitterness sometimes you get with a lot of smoke. (depends on your smoker output for sure) It won't make any difference how you slice it, not like a brisket. It's very rich and you can't eat a lot of it, but freezes very well

Take the rind off if it is on. Go ahead and cube, prior to smoking, in pieces 1" x 1". Cover with your favorite pork rub and smoke at 225-250 until the bacon starts
browning. let the temp drop to 225ish and apply a brown sugar sprinkle of your choice. Lightly coat with your glaze and cook another 15-20 minutes until it sets.
