Pork Tenderloins and Chestnuts

Took a twist on a Chef Jacques Pepin recipe, and took pork tenderloin I had seasoned for 3 days and seared it, then braised it with shelled chestnuts and served over grill roasted home grown sweet potatoes.

Mmmmm mmmm good. Save me the neck, Clark.

Yessir. Wife does. They’re kinda late like a weed/vine, super invasive, basically started in one end and took over an entire 3’ x 16’ garden box. We must’ve pulled 10-15 pounds of tubers out of there, including a couple snaky ones about 3’ long. You’re in that sandy country I think, they’d probably like that.
